龟足营养成分分析及评价

摘要:

测定了龟足Pollicipes mitella柄部肌肉的营养成分,并对其营养价值进行综合评价。结果表明龟足柄部肌肉含粗蛋白19.28%、粗脂肪2.54%、灰分1.47%、水分74.47%和无氮浸出物(NEF)2.24%。17种水解氨基酸总量为18.08% ,其中7种必需氨基酸为6.63% ,必需氨基酸指数为82.63,鲜味氨基酸为6.77%。多不饱和脂肪酸的含量占总脂肪酸的39.77%,其中二十碳五烯酸(EPA)、二十二碳六烯酸(DHA)分别占总脂肪酸的13.37%和20.67%。龟足含有十分丰富的Mg、Ca、Fe、Zn、Se,含量分别为1625.49、679.82、38.89、112.25和1.78μg.g-1。因此龟足肌肉具有较高的食用价值与保健作用。

Abstract:

The nutritive components of Pollicipes mitella were determined,its nutritional quality was also evaluated synthetically. Its crude protein,crude fat,ash,moisture and Nitrogen Free Extract (NFE) of the fresh muscle was 19.28%,2.54%,1.47%,74.47%,2.24% respectively. On the basis of fresh matter of the muscle, the amount to fhydrolytic amino acids was 18.08%,in which the content of essential amino acids was 6.63%.the EAAI was 82.63. the amount of total delicious amino acids was6.77%.The fatty acids contained 39.77% high unsaturated fatty acids (HUFA),in which the content of EPA,DHA were 13.37%, 20.67% respectively. There was a high content of minerals in the muscle of Pollicipes mitella. Especially for Mg,Ca,Fe,Zn,Se,their contents was 1625.49、679.82、38.89、112.25、1.78μg•g-1 respectively.In conclusion,the muscle of Pollicipes mitella has very high nutritive and care value.
